Case D. Fischer Guest Speaker at Culinary Experience!

Case D. Fischer, CEO and President of Fischer & Wieser, was an invited guest speaker at the NACE (National Association of Catering Executives) Culinary Experience!

Held at the Austin Hilton in Austin, Texas on July 26, 2010, the event’s title was “Conscious Catering, Keeping It Green, Local and Fresh!” and was attended by approximately 500 members of the NACE conference. The focus was on “sustainability in the hospitality industry,” as stated in the event’s invitation.  ”Top chefs from restaurants, hotels, institutions and off-premise caterers will be  paired with local ranchers, farmers, and cheese makers to demonstrate how bringing fresh and local ingredients into your menus can make a huge impact on your events and your community. You’ll experience the passion of  these artisans, taste the meaning of fresh, and learn ways to overcome obstacles and integrate sustainable practices into your business.”

Over 500 guests attended the NACE luncheon

As part of the luncheon’s menu, Fischer & Wieser’s The Original Roasted Raspberry Chipotle Sauce® was served as an appetizer over cream cheese. Jars of our jams and jellies were featured on each table. The dessert, Brown Butter Pecan Cake with Brandied Peaches and Crème Fraiche, was made with Fredericksburg Peaches from Fischer & Wieser’s das Peach Haus. Fischer & Wieser also donated 500 samples of  The Original Roasted Raspberry Chipotle Sauce® to go in “goodie bags” provided to each event attendee.

Nona Evans, Director of Worldwide PR for Whole Foods Market,  served as moderator of the event, directing questions to Case and Chef Jessica Maher of Spoon & Company/Dishalicious, who prepared the dessert mentioned above. Ms. Evans asked Case to elaborate on why caterers, restauranteurs, and specialty food manufacturers should support local farmers’ markets. Case explained “to get the freshest, most wholesome produce and provide their customers with an excellent final product, going homegrown and local is imperative.” He went on to relate how Fischer & Wieser started as a roadside peach stand in 1969 and has now grown into a producer of gourmet sauces, jams, jellies, mustards, appetizers, pie fillings, salsas, and more, and has a highly respected name in the specialty food industry worldwide.
