What a summer Food Nation New York has experienced. Back in the month of August, Case Fischer and Mark Wieser (Fischer & Wieser) got in contact with me to present their product from Fredericksburg, Texas.  I missed the opportunity to travel down to the Lone star state to visit their famous peach house. Lucky enough they shipped their jams, jellies and Moms pasta sauce so I could experience their craft.

From the looks of things Mr. Wieser has been in business since the slamming sixties producing the finest peaches and raising them himself.  A decade later he acquired Case Fischer straight out of High School. Similar to Lebron James making the transition to join the NBA’s Cleveland Cavaliers almost. Back in the day Mr. Weiser always hired kids from local neighborhoods and such, but he saw Fischer had the potential, the gift of gab sort of speak and overall great customer service. It was a dynamic duo in the making. Fast forward a couple years later they have developed over eighty products from pie fillings to their top selling roasted raspberry chipotle sauce. (LOOK BELOW!!)

Speaking of roasted raspberry chipotle sauce, OH MY HEAVENS as in my grandmother would say! This is the sauce you have to get your hands on. ASAP!  I kid you not! Good thing he doesn’t just ship nationwide, now worldwide. When I received the package, I quickly went for the raspberry sauce. Why? The description alone on the bottle sold me. So I opened it and took a spoonful to taste. My crazy and creative mind started to flow. Here’s what I did… < Ingredients

  • 1 to 1 1/4 pounds dry sea scallops, approximately 16
  • 2 teaspoons unsalted butter
  • 3 or 4 Slices of bacon to render
  • Kosher salt
  • Freshly ground black pepper
  • A small bag of roasted salt peanuts to crush
  • About 2 teaspoons Fisher & Wieser “Roasted Raspberry Chipotle Sauce”


Remove the small side muscle from the scallops, rinse with cold water and thoroughly pat dry.

Add bacon to a 12 to 14-inch sauté pan on medium heat to render bacon fat. Salt and pepper the scallops. Once the fat begins to smoke, gently add the scallops, making sure they are not touching each other. Sear the scallops for 1 1/2 minutes on each side. The scallops should have a 1/4-inch golden crust on each side while still being translucent in the center. For garnish, add salad leafs for bedding the scallops. You may want to add dabs of light soy sauce. In a squeeze bottle, add “Fisher & Wieser’s” Roasted Raspberry Chipotle Sauce. Finally sprinkle crushed roasted peanuts. Serve immediately..

We recently came across a beautiful website that caught our eyes, in the form of Edible Style, a business owned and operated by food stylist, Wendy Blasdel, Hollywood, Ca. After reading with much interest, we approached Wendy via an email, asking her if she would be interested in trying our sauces and if she thought there would be a place for them on her TV show schedule. After all, she’s done food styling since 1983 for so many wonderful TV shows and movies, to mention a few, The Thornbirds, Christmas Vacation, Mountain Man, Designing Women, Joe vs. The Volcano,  Dances With Wolves, City Slickers, Jurassic Park, Twilight, Star Trek [pilot and series], Grey’s Anatomy, Law & Order, Dynasty, Falcon Crest, Doogie Howser, Frasier, Cheers,and many more.

When she agreed, we were thrilled, so we began the process of deciding what to send  that would best fit the dishes needed for her schedule. We sent some of our best-sellers and we were very pleased with what she did with them! I just today received a bottle that I ordered on line and it is just as wonderful as I remember…..I could take the cap off and just drink it!!! LOVE, LOVE, LOVE it on cream cheese with crackers. My husband had never had it before and now he’s hooked…….will try it on chicken tonight…… think I better ordered another one….this one won’t last very long……

I have been enjoying this stuff for years now while living in Texas! Absolutely fantastic on roast pork, cream cheese., and as part of a raspberry vinegrette for salads. Now that I have moved to Germany, it is nearly impossible to get. I have to rely on my annual trip to the states or on some very good friends visiting the USA to grab me a few bottles. But a few bottles only last a few weeks. When will you guys be able to ship overseas?! I sure miss your products. Thanks so much!

I met Jay this weekend at the Spec’s Cheese Event and told him about my Mom. My husband and I moved to Houston from Louisiana more than 20 years ago and soon after that, my Mom and Dad started visiting us here. During one of those early visits, my Mom bought a bottle of Fischer & Wieser Raspberry Chipotle sauce and the rest is history.

For several years after that, she’d come to visit and bring back home a case of the delicious sauce. Now, it’s available where she lives and she doesn’t have to come here to get it. I often wonder if THAT’s the reason she makes fewer trips these days (grin.) but she continues to buy it in bulk and pass it out to everyone she knows.

Original Roasted Raspberry Chipotle Sauce is absolutely amazing. I was reluctant when I first saw it as an appetizer at a wedding reception. One taste and I was sold. It was my favorite treat for the day. I ate way too much of this wonderful delicacy and just couldn’t get enough. How happy I was to log onto your site and see it along with all these other precious items. I have been telling all my friends about it and now I can direct them where to log on and get spoiled. We simply love this sauce. I make the salad dressing very often as we eat it every day!

GREAT! Makes a great Spinach salad w/roasted slivered almonds,slivered red onion and drained mandarin oranges ..fresh baby spinach. Dressing 1/2 cup of MangoGinger Habanero.1/4 cup of balsamic and 1/4 cup of olive oil. Huge HIT with EVERYONE! I thought I got this recipe on this site but can not find it. Don’t hesitate to try it…..everywhere I take this salad (easy to take)..I have to provide the recipe! Great product! Thanks!

Probably the best sauce with a “little” heat. Love it.

I love this salsa. I reduce it to 1 cup by simmering and after cooling it, I mix it into 1 8 oz. softened cream cheese. It’s a delicious dip for tortilla chips or veggies. Everyone who I’ve serve it to loves it as well.

YOUR PEACH SALSA IS SO GOOD – IT’ S ADDICTIVE! I first tasted it in Texas at my step-daughter. She sent us a case of four after we got home and of course it’s all gone.

Spread the amaretto peach pecan jelly over brie and microwave it for 20-30 seconds until he cheese is soft. Cover with toasted sliced almonds. Serve with crackers. It’s the best!!

Love amaretto peach or the fig jelly with mozzarella and prosciuto grilled on sourdough bread… love love love it…

There are not enough stars in the sky to rate this product with. I love it and have used it so many ways…on toast, ice cream, ham, cream cheese, or just a spoon. Please, never stop making it!

This is the best jelly I’ve ever tasted. It came in a gift basket and I am back for more.

I really like your Guacamole Starter because it was as easy as you made it sound on the label. I added an extra 1.5 avocados, and it still tasted great. I also sprinkled in Mrs. Dash chipotle seasoning and liquid aminos for added salt because I was using very bland low salt blue nachos with sesame seeds baked in.

This Guacamole Starter is the best!! Super easy to make and it tastes great! (Also keeps the leftover dip from turning brown.) Have given many jars as gifts and now have a group of friends that are hooked as well.

  • Just wanted to let you know that F&W made it to our belated Chanukah Brunch table. The Roasted Rasperry Chipotle Sauce over cream cheese stood out on the dip table. I made the Apricot Orange Marmalade Cheesecake Bars which didn’t set properly. I probably over beat it which caused too many air bubbles. I scraped out the filling and served it as a custard which turned a disaster into a success. But the piece de resistance was the Roasted Raspberry Chocolate Cake. I used a devils food cake recipe. I didn’t want to use sherry and forgot to get chocolate sauce so I used caramel. It was unbelievable! Too bad I didn’t see that martini recipe till today. It would have been a great end to the day! By the way, my official taste tester, husband Larry Fox, just asked what I was going to try next.

    • Tonights dinner: I had some Roasted Raspberry Sauce left over and some chicken tenders. Marinated the chicken for 5 hours in just enough sauce to cover it. Sprayed a baking dish with no-stick cooking spray. Brushed the chicken with some sauce. Baked for 10 minutes. Turned the chicken and brushed some more. Baked for 10 more minutes. Served with tomatoes and peppers sauted in olive oil, garlic, and onion and some brunch leftover noodle pudding. Another easy meal a la F&W. Larry thanks you!

What is a chipotle pepper?

Chipotle Peppers – smoked red jalapeño peppers

We get asked this question so much, we decided to post our definition. Put simply, they’re smoked jalapeño peppers.

Jalapeño peppers are mostly grown in Mexico, New Mexico, and Texas. On the Scoville scale (a scale for measuring the heat in peppers devised by Wilbur Scoville, a pharmacist, in 1912), they rank between 2500-10,000 SHU (Scoville Heat Units). This means that a chipotle pepper  is relatively mild in comparison to a pure capsicum which tops the scale at 15-16 million units.

Jalapeño peppers originated in Mexico in a town in Veracruz called Xalapa–hence the name, jalapeño. The plants are about 2.5 to 3 feet high and produce 25-30 plants per season. Growers pick several times throughout the season; the red, unripened peppers are chosen to be smoked to make chipotles (pronounced chee-POTE-lays).
